This week I had some inspiration from ITV’s Lorraine “Free From February”. I love experimenting with recipes, especially clean treats as I have a sweet tooth myself! These RAW Millionaire’s Shortbread really caught my eye so I had a go.
I never stick to an exact recipe, I try to see what I think of the texture and taste as I’m going along. The recipe set is found here. I used all of the same ingredients in slightly random quantities and substituting maple syrup with agave syrup.
- Gluten free OATS
- Ground Almonds
- Agave Syrup
- Whole Earth Peanut Butter (a sugar free brand!)
- Chopped Dates (a handful)
- 4 tps of Water
Mix together all of the above ingredients into a bowl creating a crumbly texture. Before flattening down into a square tin covered in grease proof paper. Flatten down with a spoon then pop in the fridge to chill and set.
- 2-3 tbsp the same Peanut Butter
- Half cup of water
- Couple of chopped dates
- Dash of syrup
- Dash of vanilla extract
Whip it all together in the same bowl until it’s at a caramel like texture – not too gooey. Spread across the whole of the base and pop into the fridge to chill further.
- 70+% DARK chocolate
Melt thoroughly and spread immediately across the whole spread, pop in the fridge to set. Leave for an hour – then carefully chop into pieces without letting the chocolate crack too thoroughly.
